Pecans cake
Ingredients
pecan halves - 150g | |
dates - 70g | |
butter, softened - 200g | |
demerara or golden caster sugar - 190g | |
mixed spice - 1/2 tsp | |
eggs, beaten - 4 | |
self-raising flour - 140g | |
maple syrup, to serve |
Method

Put the pecans and dates into a blender or food processor and ground them. |

Heat oven to 180C/fan 160C/gas 4. |

Beat the butter, sugar and spice together until creamy, add the ground pecans and dates, eggs and a pinch of salt and mix. |

Fold in the flour with a spatula, then add the mixture into a 23cm silicone cake tin. Add the remaining pecans on the top. |

Bake until risen and golden and a skewer comes out clean (approx. 40min). To be served with maple syrup. |
