Fake bechamel sauce sans roux

Ingredients

Milk - 600ml
Onion - 1
Bay leaf - 1
Cloves - 2 or 3
Whole black peppercorns - 6
Nutmeg - Grounded
Cheese - 100g
Cornflour

Method

Bring the milk just to the boil with the onion pierced with the bay leaf and cloves, nutmeg and the peppercorns.

Remove from the heat and leave to infuse for 20 minutes before straining.

Brink back to the hob over a low heat. Added the cheese bit by bit until mixed

Add cornflour to thicken if necessary
