Pan fried fish on potatoes with asparagus

Ingredients

fish - 2 fillets
potatoes
asparagus
spring onion (optional)
Dried parsley
Garlic - 3/4 cloves minces
Butter
Lemon juice

Method

Preheat oven at 220. In pyrex roaster cut potatoes into cm cubes and cut spring onion

Season potatoes in roaster. Add dried parsley, oil, lemon juice. Put in oven

Halve asparagus and wash.

Mince garlic

Medium/High heat on pan. Add butter. Add Garlic. Add asparagus. Season. Cook about 6 mins. Cover towards the end

Salt fish. Medium/High heat pan. Add butter. Add fish. # mins each side. Add lemon juice towards the end.
