Classic Tomato Pasta Sauce

Ingredients

olive oil - 2 tablespoons
brown onion - 1
salt
tin chopped tomatoes
tomato puree
Garlic - 3
honey - 0.5 tablespoon
dried basil
pasta

Method

Dice onion. Heat the olive oil in a medium saucepan and then add the onion. Cook the onion and salt, stirring, for 5-8 minutes until golden and starting to lightly brown.

Add the canned tomatoes, tomato paste, garlic, and some water and stir well. Cover the pot part way and bring to a simmer. Cook for 20 minutes.

Add the basil & honey and stir well. Add more water if the mixture is too thick. Cook for a further 10-15 minutes over medium heat.

Serve over your favourite pasta, with or without a few chopped fresh herbs or parmesan cheese on top.
