Trout with aubergine
Ingredients
Trout - 1 | |
Aubergine - 1 in half slices | |
Spring onion - 1 into inch chunks | |
Black bean sauce | |
Cornflour | |
Garlic - 2 cloves | |
Ginger - A few slices |
Method

Prep fish, salt, then flour. Boil kettle |

Heat pan, add oil then fish. Then put fish aside |

Add aubergine and cover with lid. Once browned add ginger and garlic. |

Add hot water and black bean sauce. Place fish in middle. Cover with lid and simmer for about 8 minutes |

With one minute left add spring onions. Serve |
