Trout with aubergine

Ingredients

Trout - 1
Aubergine - 1 in half slices
Spring onion - 1 into inch chunks
Black bean sauce
Cornflour
Garlic - 2 cloves
Ginger - A few slices

Method

Prep fish, salt, then flour. Boil kettle

Heat pan, add oil then fish. Then put fish aside

Add aubergine and cover with lid. Once browned add ginger and garlic.

Add hot water and black bean sauce. Place fish in middle. Cover with lid and simmer for about 8 minutes

With one minute left add spring onions. Serve
