Taro tapioca coconut dessert
Ingredients
tapioca pearls - 1 cup | |
water | |
Taro root - 2 cups, peeled and 1cm cubes | |
Coconut milk - 1 can | |
Rock sugar - 0.66 cup |
Method

Boil 4 cups of water, add tapioca pearls. Simmer for about 7 minutes. |

Cover then pan and stand for 10 to 15 minutes. Pearls should become transparent. Drain and set aside. |

Boil 6 cups of water. Stir in taro root. Simmer for about 10 minutes until soft. |

Add coconut milk, rock sugar. Simmer for 20 minutes. |

Mix in pearls. Serve hot, room temperature or chilled. |
