Prawn pasta

Ingredients

prawns - 14
pasta
garlic - 4 cloves, diced
onion - 1, sliced
parsley
white wine
black pepper corns
bay leaf - 1
tomatoes
lemon zest

Method

de-shell, de-vein and clean prawns, salt and set aside

stainless steel pan, medium heat. add shells, peppercorns, bay leaf reduce over 10 minutes

prep other ingredient and put kettle on

sieve pan and set stock aside

brown prawns then set aside

brown garlic and onions then add tomatoes

put pasta on

once tomatoes cooked add remaining ingredients then season
